Optimization of the HACCP safety control system for collagen hydrolysate production by implementing the FMEA model

This study was carried out to determine the impact of HACCP control system on safety final products collagen hydrolysate production. The object equine connective tissue. Using FMEA model, established by a three-factor assessment risk priority number (RPN), critical points (CCP) in processes hydrolysis, inactivation enzyme preparation, drying and storage were identified. For two CCP, measures for continuous monitoring identified, limits developed. CCT 1, calculation optimal fermentation using mathematical model hydrolysis raw materials is given. values Neutrase enzyme, providing maximum content water-soluble proteins 55.0 mg/cm3, determined: T=37 °C, dosage 5 Pa/g, t=210 min.
 CCP 2, avoid protein denaturation during limit developed determining heat point optimum temperature. Experimental analyses show that estimated rate FTN accumulation, which has 20 % at 60 reached 11th minute.
